Simply Amazing French Lemon Tart

Time of preparation: 1 hour Difficulty: Easy
  • Flour_______1,5 cups
  • Sugar______ 3 tablespoons
  • Salt _______ ½ teaspoon
  • Butter______110 grams
  • Yolk_______ 1
  • Lemon Juice_2 tablespoons
  • Eggs ______3
  • Sugar______150 grams
  • Butter (melted)_100 grams
  • Lemon Zest __1 tablespoon
  • Lemon Juice_120 ml
1.     Diced butter put in the freezer for few minutes. Mix flour with salt and sugar, add the butter and make the dough. There are two ways: if you have a food processor, put the flour and butter there and cut into small crumbs (dough shouldn’t be homogeneous). Alternatively, you can but flour on some surface, add butter on top and with a big knife start chopping butter until small crumbs. Slightly whip yolk with lemon juice and add to the dough. Mix well, after make a ball and wrap into the cling film and put in the fridge for 20 minutes.
2.     Roll out the cooled dough; put it in the baking dish, make halls in the bottom with a fork, and put some weight in the middle (there are special balls, but most common is still to put beans in a small bag or even without bag.  It prevents dough from growing). Bake for 15 minutes on 220C (428F), then remove the beans (or what you use) and let for 5 more minutes. Take out and let it cool.
3.     In the meanwhile melt the butter; whip the eggs with sugar, add butter, lemon zest and juice. Pour on the dough, bake for 15-20 minutes (till the stuffing becomes dense).
Serve with vanilla ice cream or decorated with lemon slices.
