Turkish Lentils Soup


The lentils soup is a typical dish of Turkish cuisine; it is almost impossible to imagine lunch without it.

Time of preparation: 35 minutes Difficulty: Easy
  • Red Lentils_______150 grams
  • Onion____________1
  • Garlic____________3 cloves
  • Vinegar__________ 1 tablespoon
  • Zest of one lemon
  • Broth____________1,5 liters
  • Sweet Red Paprika_ 1 teaspoon
  • Curcuma__________1/2 teaspoon
  • Coriander Seeds___ ½ teaspoon
  • Carrot____________1
  • Red Pepper_______ 1
  • Butter____________20-30 grams
  • Sweet Red Paprika_ 1 teaspoon
  • Flour_____________ 1 tablespoon
For serving: Natural yoghurt and lemon juice

1. Fry cut onion and garlic on the olive oil in a pot. Add spices and vinegar and let it evaporate.
2. Wash lentils. Cut vegetables into small pieces. Add lentils, vegetables and lemon zest to the pot, pour broth or water. Don’t put salt! Cook till lentils are ready, about 20-25 minutes.
3. Melt butter on the frying pan. Fry flour and paprika on it for couple of minutes, add to soup. Cook it for several minutes; add salt and pepper. Mash in blender.
4. Serve hot with natural yoghurt and lemon juice.
As you can see on the picture, I don’t have blender so I eat it not mashed. You can adjust the amount of broth depending on the preferred density.
