Vegetable Crumble




Crumble can be not only a dessert but a salty (and tasty) main course.

Time of preparation: 40 minutes Difficulty: Easy
Tomatoes___2 middle
Aubergine__ 1
Zucchini____2 small
Mozzarella__100 grams
Pine nuts___2 tablespoons
Oil_________2 tablespoons
Flour______ 150 grams
Butter______75 grams
Thyme, Salt, Pepper

1.     Cut tomatoes in halves; dice mozzarella, aubergine and zucchini. Fry aubergines with zucchini on olive oil for 10 minutes.
2.     Mix the flour with thyme, salt, pepper, add diced butter and mix with hands into the crumbles.
3.     On the bottom of a baking dish put fried vegetables, cover with nuts and mozzarella, add salt and paper to taste. Then put halves of tomatoes and cover with crumbled dough.  
4.     Bake on 180C (350F) for 25 minutes, serve warm.
