Apple Rings

About weekend breakfast I can speak for hours. When you finally can be lazy, slow, when you stay long in the bed and after barefoot run in kitchen to create something very special, to celebrate this wonderful time – Saturday morning. And the sun is always quite high and lighten all your kitchen. And then you can sit, eat pancakes (for my dear “something special” automatically refers to them:)) with jam or maple syrup, and look in the garden… Amazing, right? But let’s imagine, what people in the different parts of the world do this not-so-early Saturday? Guys from Hostelbookers did a research about traditional breakfasts in 50 countries. They got a lot of critics, saying these dishes are not really what people eat every day, but here is the point, right – what would you eat for the breakfast, if you can choose from the best national dish? Anyway, I can confirm Italian, American, Russian, and British breakfasts as correct, so it is already a good start. Anyway, have a look, indeed interesting!
Ok, this breakfast recipe is borrowed from Afra (oh, she is the best person for the breakfast inspiration). I prefer these apple rings (BTW, a traditional Dutch breakfast of the list above) to traditional pancakes, they are way tastier and healthier as well.
Time of preparation: 40 minutes Difficulty: Easy
  • Apples_____2
  • Egg_______ 1 small
  • Flour______70 grams 
  • Baking Powder____1/2 teaspoon 
  • Baking Soda______1/4 teaspoon
  • A pinch of salt
  • Buttermilk_______60 ml (if you don’t have it – take simple milk and a tablespoon of apple vinegar).

Dutch Pancake


Dutch pancake is something in the middle between a pancake and an omelet.

The recipe I found in the wonderful blog of Afra, where you can see a better picture (it just happened that all my round baking dishes were occupied with some cakes, so mine breakfast was square-shaped) and find a lot of  fantastic recipes and stories. This pancake is simply amazing – strange I’ve never seen it in the NL.
Time of preparation: 40 minutes Difficulty: Easy
  • Butter_____50 grams
  • Eggs______3 (room temperature)
  • Flour______60 grams 
  • Milk_______120ml
  • A few drops of stevia (maple syrup, or sugar)
  • A pinch of salt
  • A few drops of vanilla essence
  • A pinch of cinnamon (optional)
Icing sugar for decoration

Carrot Pancakes



Time of preparation: 20 minutes Difficulty: Easy
  • Carrots ____ 500 grams
  • A piece of fresh ginger
  • Bread______2 slices
  • Egg________2
  • Almond____ 3 tablespoons
  • Bread Crumbs
  • Salt, Pepper
For souse:
  • Nonfat cottage cheese __100 grams
  • Plain Yoghurt _________ 125 grams
  • Curry________________1,5 teaspoon
